One last blowout before we all get fit in the new year
BY NOW you are probably sick of eating left over turkey, ham, prawns and potato salad, so are we.
Now it's time to see in the new year and that means with great food.
Before we all begin our resolutions of eating healthier and being more active, let's have one last celebration and really bring in 2015 with a bang.
So this week we thought we would share our best "the day after" cure - burgers and a fresh mixed juice.

- 1 tbs of salt flakes
- ½ tbs of cracked black pepper
- 1 tbs oil
- 500g of good quality beef mince
- 1 tbs of butter
- 4 fresh bread rolls
Mix the beef, oil and salt and pepper in a bowl and form 4 loose, round patties about 1.5cm thick with your hands and set aside.
Heat the butter and a little drizzle of olive oil to sizzling hot in a frying pan, then add the burger patties.
Fry them until crisp on each side and springy to touch, about 3-4 minutes if you like them rare, or 5-7 for medium. Remove from pan.
Add 3 tablespoons of water to the pan, scrape up all the burger bits on the bottom and allow the gravy to bubble and thicken for a minute before pouring it over the cooked patty.
Always serve your burger on a lightly toasted, bakery-fresh roll.
Our favourite is the one with the flour on the top.
There are endless accompaniments to make your burger really special. Serves 4
Try these classic toppings we love:
- Fresh sliced tomatoes with salt
- Cheese, sliced very thinly - try Gruyere or Swiss
- Lettuce - plain, crisp iceberg is best
- Homemade tomato ketchup
- Fried onions, cooked until almost caramelised
- Homemade mayonnaise /garlic aioli
Although very tempting, try not to overcrowd the burger, we think in this case simple is best. One combination we love is lettuce, tomato, caramelised onion, mayonnaise, cheese and dill pickles.

Fresh mixed juice
6 wedges of cut watermelon
4 slices of fresh pineapple
3 small wedges of fresh papaw
1 orange, peeled and sliced
a small handful of mint leaves
1 cup of coconut water
1 big scoop of ice
Place all ingredients into a blender and process until smooth.
