'Never thought we could win': Smoke-Off champions crowned

CONSISTENT results on the smoke-off circuit in the lead up to Kingaroy BaconFest proved to be the perfect preparation for team Signature Smoke.

Sonia Cattell and Stephen 'Sticks' Halliday, who judged the inaugural BaconFest competition, were over the moon to get the nod from this year's judges and be crowned grand champions in the Australasian Barbecue Alliance round.

"We never thought that we would be able to win this," M Halliday said.

"We have never won GC before, the best we have ever done before is third place."

The team first started competing 12 months ago and said perfecting their timing was key to success, having to present meat to the judges four times throughout the afternoon.

"We are starting to get very consistent and we had a plan.," Ms Cattel said.

"It was all about being organised, having run sheets and going to bed early."

The team were named top ten in three of the four hands to claim the top prize of $5000.

"An average comp costs $1000 to compete and it more by the time you buy your meat," Ms Cattell said.

"This means that we can keep competing."
